A regional Burgundy appellation for quality sparkling wines, white or rosé, recognised by decree on 17 October 1975 and produced across more than 300 communes in the Yonne, Côte-d'Or, Saône-et-Loire and Rhône. The wines are made solely by second fermentation in bottle, from hand-picked grapes; they spend at least nine months on their lees and may not be sold to consumers until twelve months after tirage (bottling for the second fermentation). Eight varieties are allowed without ranking, but Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir must together make up at least 30% of the cuvée.
